We are a small restaurant in Brighton – we change our menu weekly and cook with the seasons working with local suppliers. Our menus show our heritage and our journey through a variety of delicious eclectic dishes cooked over an open fire. 


Kanthi hails from South India and Diego comes from Ecuador. Palmito used to be a takeaway and it was born out of a joint desire to create a real market-style place in Brighton. We are small and informal but we like it that way.


We work closely with small local wine and drinks merchants who share our values and our wine list changes as often as our menu.


For us simplicity, seasonality, community and spontaneity are key and we look forward to welcoming you to Palmito.
