Palmito is a tiny, informal 20-seater restaurant located in a former takeaway near the Brighton-Hove border on Western Road. It was created with the desire to establish a real market-style place in Brighton.
Our founder, Diego, comes from Ecuador and has lived and travelled in Latin America, Southern Europe, and South Asia. This is reflected in his eclectic, spice-driven menu, which changes weekly. Our open kitchen with a charcoal grill is at the heart of our restaurant.
We work closely with small local farmers, fishermen, and food suppliers who share our values.
Our cocktails and wine list change as often as our menu.
For us, simplicity, seasonality, community and spontaneity are key, and we look forward to welcoming you to Palmito.
